Jack’s BBQ Brings Central Texas BBQ to Columbia Center

Early this morning, Jack’s BBQ opened up in Columbia Center in downtown Seattle. I dropped by for some breakfast tacos and ran into Owner and Pitmaster Jack Timmons. Jack’s BBQ has emerged over the years as one of the hottest places to grab slow cooked brisket in Seattle. It’s one of my favorites for sure!

For breakfast, I had a brisket taco and cheddar jalapeno sausage taco. I’m a lover of brisket and Jack’s serves it up simple! Quality meat seasoned with salt and pepper, smoked low and slow over hardwoods. Jack explained that since the brisket needs to rest, this is an ideal situation where the brisket can be brought to this location while it waits for the next step in the process. The tacos are served up with potatoes, eggs, and cheese in tortillas. Jack mentioned that they did a lot of research into which tortillas should be used and he’s excited about their choice and quality. After trying the tacos, I can tell you that they are hearty enough to hold up to the filling, didn’t get soggy with my green sauce, and had nice flavor and texture.

Breakfast tacos is a great addition to the neighborhood. I work nearby and I’m always looking for different food options. Opening at 7am, Jack’s will be ready to serve hungry commuters in the offices nearby until 9am with their breakfast menu.

In addition to breakfast offerings, customers will be able to get plates, sandwiches, and salads that we’ve all come to love from Jack’s. I’m excited to grab lunch there very soon!
